Royal Palm Chocolates attends elite master class


NAPLES, Fla. (Jan. 24, 2012) – Philip Fincher, local chocolatier and co-owner of Royal Palm Chocolates, attended the Notter School of Pastry Arts’ 2012 Professional Course Series which took place in Orlando, Fla. from Jan. 20-22, 2012.

Royal Palm Chocolates, headquartered in Naples, is a retail and wholesale shop where Fincher handcrafts fresh Belgian chocolates, chocolate barks, wafer cookies, seasonal specialties and other confections.

A graduate of the Notter School, Fincher returned for an advanced class taught by world-renowned chef Christophe Morel. The class focused on elaborate techniques necessary for creating competition quality bonbons, chocolates and pralines, covering both traditional style ganaches and modern whipped ganaches. Attendees also learned the latest trends in exhibiting and finishing.

“There is always something new and inspiring to learn,” said Fincher. “I look forward to implementing these new techniques in our shop and sharing the results with our customers.”
